- Sterlet is one of the smallest sturgeon fish. Under RAS conditions, sexual maturity is reached at 2–3 years of age. It reaches marketable weight in 1 - 2 years and varies from 250 g to 3 kg.
Chilled fish is of high quality and retains all the properties and taste of live fish.

Shelf life at temperatures from 0 to minus 2ºС no more than:
- in the first and fourth quarters - 12 days,
- in the II and III quarters - 10 days.
