- Bester is a sturgeon hybrid obtained by crossing beluga with sterlet. In RAS it reaches sexual maturity at 4–5 years of age.
It reaches a marketable weight of 3 to 12 kg in 2 to 5 years of cultivation.
Chilled fish is of high quality and retains all the properties and taste of live fish.

- in the first and fourth quarters - 12 days,
- in the II and III quarters - 10 days
